Curiously the name of (bordering country) Chile bears no association with chillies. Columbus is credited with introducing chillies to the “New World” though it was the Portuguese traders who were prolific in introducing chillies to India and Asia. Linguini with Chilli and Prawns - Cook linguini in boiling salted water until al dente, drain (reserve some of the water). Sauté peeled prawns (tail on) with olive oil, chopped garlic, oregano, and crushed chilli. Add chopped tomatoes, lemon zest. Add the pasta with a little reserved pasta water. Check seasoning and toss thru spinach leaves.

Homemade Sweet Chilli and Coriander Sauce. Combine 3 tbsp crushed chillies, 1tspn Cayenne pepper, 4 tbsp minced garlic, 300 gm sugar1/2 tspn salt, 120 ml rice vinegar, 250 ml water, 1 tbsp soy sauce. Heat all ingredients and simmer for 4 minutes. Moisten 1 tbsp corn flour in water and whisk into sauce. Simmer for 2 minutes, cool and blend in 6 sprigs of coriander.
