Nutmeg Pain Purdu (French Toast)– Serves 4 

Whisk together 3 whole eggs, 120 ml milk, 2 Tbsp natural yoghurt, 1 pinch salt, 1 scraped vanilla bean (optional), 2 tbsp sugar, 1 tbsp orange zest, 1/2 tspn freshly grated whole nutmeg. Lay thick slices of sourdough or ciabatta or 1 baguette into a deep tray. Pour egg mixture over the bread, turn bread over after a few minutes. Repeat rotating until the bread has soaked up the mixture. To cook, place butter in a nonstick pan, fry bread on all sides until golden. Dust with icing sugar, some extra freshly grated nutmeg, maple syrup, or fresh berries.   

For a healthy mashed potato using desiree potatoes, add olive oil instead of butter (or half and half). Add grated nutmeg to warm milk before mixing into the mash. 

Add when sautéing spinach, zucchini, cabbage, Brussel sprouts or baking pumpkin or root vegetables. 

Simple Nutmeg Linguine - Toss grated nutmeg with linguini, seared prawns, toasted pine nuts, softened feta, nut brown butter, and sage leaves.
