Salt and Pepper spice mix – Blend 30 gm potato flour, 30 gm rice flour, 1 tbsp salt, 1 tbsp Sichuan pepper, 1 tsp white pepper, 1 tspn smoked paprika and 1/2 tspn cayenne. Use to coat prawns or calamari before deep frying or as a seasoning for home style fries or chicken wings.  

 

Sichuan Dry Fried Green Beans – Serves 4

Ingredients - 450 gm green beans, 3 tbsp vegetable oil, 2 tbsp sesame oil, 3 cloves garlic (crushed), 4 dried red chilies (soaked, diced), 1 tbsp Sichuan pepper, 4 tbsp Shaoxing wine, 3 tbsp soy sauce, - 300 gm pork mince (optional) with 1/2 tspn Chinese five spice. 

Method- Combine Shaoxing, sesame oil and soy sauce and set aside. Dry fry the beans in a searing hot wok with the oil until they begin to blister and char. Add garlic, Sichuan pepper, chilli and stir-fry for 10 seconds. Add Shaoxing mixture and stir-fry for 30 seconds. If adding pork mince, dry fry with Chinese five spice (before cooking the beans) until it resembles a coarse crumble that can be tossed with the beans during the last 30 seconds of cooking.
