Our Texas spice has a smoky, fragrant flavour with mild heat. For extra heat add more cayenne.
Great with any grilled foods or dusted over sweet potato wedges.
Use Texas BBQ as a dry rub (moisten meats with olive oil first) or make a paste by combining the spice mix with olive oil and massage into the meat. Rub (or massage the paste) over meat cuts suitable for long slow cooking, smoking and/or barbecuing, like beef brisket, beef short ribs, whole chicken, lamb leg, pork ribs or upper shoulder pork butt (though it has no connection with the butt), for classic pulled pork.
Pulled Pork – can made with a slow cooker or oven. Simply rub a 2 kg pork butt or pork shoulder with Texas BBQ spice. Combine 1 tbsp garlic (crushed), 1/2 cup cider vinegar, 2 tbsp Worcestershire, 1/2 cup ketchup, 1/2 cup brown sugar, extra 3 tbsp Texas BBQ spice, 1 tspn salt. Place in the cooker with the pork, cover and slow cook for 8 hours. When cooked, shred the meat using a fork, and serve on soft buns with coleslaw, on baked potatoes or over nachos.
